Good morning sunshines — this one’s a healthy breakfast idea for two people. I made it on a sunny morning when I wanted something light but warm and filling. No cheese, no toast — just fresh veg, clean eggs, and lots of color on the plate.

Simple food like this is always satisfying, and it only takes 15 minutes to prep.

What’s in This Breakfast (for 2 Lovely People)

Main Plate (per person):

  • One veggie omelette made with 1.5 eggs
  • Sliced smoked salmon (small side portion)

Sides:

  • Steamed spinach
  • Sliced avocado with cucumber and cracked pepper
  • Grated raw beetroot
  • Cooked pumpkin cubes with raw carrot sticks
  • Fresh espresso (served without sugar, as usual)

No bread, no dairy — just clean ingredients that give you real energy.

  2. Cook the omelette in a nonstick pan, no oil, until just set — fold and serve.
  3. Steam spinach and pumpkin briefly — no added salt or oil.
  4. Slice avocado and cucumber, top with black pepper.
  5. Grate beetroot and prep a few carrot sticks. Serve with espresso or coffee.

I didn’t add cheese this time — kept it lighter and simpler, and honestly, didn’t miss it at all.
